We've been on Paddington Basin since 2019. What started with one wrap has grown into seven trucks, four concepts, and a queue that doesn't stop. The standards haven't moved.

The story

How it grew.

We started in 2019 with one food truck: Simply Falafel. The menu was short. The queue grew before the marketing did.

In 2021 we added Simply Shawarma next to it. Same team, same standards, different cuisine. Two queues on Merchant Square.

Simply Burgers came next, because people kept asking us for one. Smash patties, melted American, soft brioche. It sits on Canal Side Walk, 250 metres east of the other two trucks.

Seven trucks, four concepts — and the standards are the same on every menu.

What we believe

Three things, on every menu.

  1. Quality

    Real ingredients, properly handled. Marinades go in early. Doughs proved long. Sauces from scratch.

  2. Simplicity

    Small menus, done well. We'd rather make one wrap brilliantly than ten things passably.

  3. Consistency

    Monday's burger is Friday's burger. Trip after trip, that's the only way the queue stays.
